I love trying a new recipe, especially when it’s halfway healthy too.
Last night I got creative from a simple shrimp scampi recipe. Here’s what I did:
24-26 shrimp, peeled and thawed (if necessary)
1-2 tsp. olive oil
1 or 2 tsp. margarine spread like Smart Balance
2 tsp. sweet chili sauce
1/2 tsp dry basil
sprinkle of red pepper flakes to taste
dash of salt
1 c. fresh spinach, chopped
1 c. egg noodles, cooked
First I cooked the shrimp on medium with the butter, olive oil, basil, sweet chili sauce and red pepper flakes. Keep covered and careful not to cook out all the butter and olive oil.
Then I turned it to low, and added the spinach while I was cooking the egg noodles.
Added the cooked egg noodles, stirring and coating well. Add the dash of salt and voila! Yum, yum yummy shrimp, spinach and noodles!
